
Ingredients
- 1 cup cooked pinto or red kidney beans (canned will do)
- 1 sliced cucumber
- 1/4 cup chopped sweet green pepper
- 1 tablespoon finely chopped onion
- 1/2 teaspoon parsley
Directions
- In a bowl, gently combine salad ingredients (beans, cucumber, sweet green pepper, onion and parsley).
- Serve with Green Chile Dressing.
