Ingredients
1 cup all-purpose flour
1/2 cup unsalted butter (cold and cubed)
1/4 cup monk fruit
1 large egg yolk, 1 tbsp ice water
1 cup heavy cream
8 oz dark chocolate (70-72% cocoa)
1/4 cup monk fruit (plus extra for dusting)
1 tsp vanilla extract
1 cup fresh raspberries
Directions
Preheat oven to 375°F (190°C).
In a food processor, combine flour, butter, and sugar.
Pulse until crumbly. Add egg yolk and ice water, pulse until dough comes together.
Press dough into a 9-inch tart pan with a removable bottom.
Bake for 15-20 minutes until golden.
In a saucepan, heat cream until hot but not boiling.
Remove from heat, add chocolate, and let sit for 2 minutes.
Whisk until smooth. Stir in sugar and vanilla. Pour chocolate mixture into the pre-baked tart shell. Arrange raspberries on top.
Chill for at least 2 hours before serving.
Dust with powdered sugar before serving.
