Instant Pot Mexican Rice

Mexican Rice — A Story of Culture & Culinary Adaptation

Rice is not native to the Americas; it was introduced by Spanish colonizers in the 16th century. The dish we know today evolved from Spanish rice dishes. Upon arriving in Mexico, the Spanish found a wealth of native ingredients, including tomatoes, onions, garlic, and a variety of chilies. The signature red color of Mexican rice comes from cooking the rice in a broth made from pureed tomatoes, often with garlic and onion, and then browning the grains in fat before adding the liquid. This method of toasting the rice first is a key step that distinguishes it from other rice preparations, giving it a firmer, separate grain and a nutty flavor. The dish became a staple of Mexican home cooking, served alongside beans, meats, or as a filling for tacos and burritos.

 

Instant Pot Mexican Rice

Ingredients

  • 2 tablespoons oil
  • 2 cups white long grain rice
  • 2 3/4 cups water
  • 3 1/2 teaspoons Knorr Caldo de tomate con sabor de pollo boullion
  • 1/2 teaspoon salt
  • 1/2 cup corn, peas and/or carrot (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon turmeric
  • 2 tablespoons tomato sauce or 1 tablespoon tomato paste

Directions

  1. Set instant pot to saute setting.
  2. When hot, add oil and let it heat for about a minute.
  3. Add rice and stir until slightly browned.
  4. Pour water into the instant pot.
  5. Add boullion, salt, pepper, turmeric, and tomato sauce or tomato paste.
  6. Make sure instant pot top has rubber ring inside, close the lid, set valve to seal, and cancel saute function.
  7. Once the lid is secure, press the rice button and set the timer to 10 minutes.
  8. When the instant pot beeps with the 'L' indicator displayed, allow the instant pot to de-pressurize until the timer displays -13 minutes.
  9. Release the valve to allow the instant pot to completely depressurize.
  10. Open the lid, stir and enjoy!
